Hop Extracts – Concentrated Variety of Aromas in Liquid Form
Explore the possibilities of hop extract, a concentrated source for a variety of aromas. Our hop extract is ideal for brewers who desire precise control over hop aroma. Due to its liquid form, the extract can be easily dosed and integrated. Dive into the world of hop extracts and experience how this innovative ingredient can impart a unique flavor direction to your beers.
Manufacturing Hop Extracts
Hop extracts are obtained through careful extraction processes that concentrate the aromatic and bitter components of hops. Initially, high-quality hop pellets or flowers are selected and subjected to an extraction process to extract the desired aromas and bitter substances. This extraction results in highly concentrated extracts that provide your beer with an intense and complex aroma.
CO₂ Extract
CO₂ (carbon dioxide) is used to extract only the α-acid from the raw hops. The α-acid content is determined using the EBC 7.7. HPLC analysis method. Processing costs are higher than those for ethanol extract. Xanthohumol must be extracted from the hop residues left over from the extraction of CO₂ extract in an additional step. Abroad, CO₂ extracts are primarily preferred.
Ethanol Extract
Ethanol extracts not only the α-acids but also iso-α-acids, β-acids, and other fractions that contribute to bitterness. The bitterness is determined using the conductivity bitterness value (KBW), analysis method EBC 7.6. + ½ EBC 7.8. HPLC. Since the KBW captures more bittering fractions, the yield from ethanol extracts (Eth-RHE) is higher compared to CO₂ extracts. Relevant for large breweries is the fact that the ethanol extract requires slightly lower temperatures (lower energy requirements) to become pumpable compared to CO₂ extracts. The ethanol extract contains xanthohumol, a cancer-preventive agent. There are no taste differences from CO₂ extract.
Advantages of Hop Extracts
Hop extracts offer a variety of applications and can be used in different beer styles and brewing methods. They are suitable for making lagers as well as ales, IPAs, stouts, and much more.
Due to the concentration process, hop extracts contain a high amount of aromatic compounds that provide your beer with an intense and complex aroma. This aroma can be precisely controlled during brewing, allowing for exceptional taste quality.
Hop extracts allow for precise dosing and offer easy handling during brewing. You can accurately control the amount of extract used to achieve consistent results and the desired flavor.
Compared to fresh or dried hops, hop extracts have a longer shelf life and are less prone to oxidation and spoilage. This means you can store your extracts longer without losing quality.
What Should I Consider with Hop Extracts?
When buying hop extracts, pay attention to the variety, origin, and concentration to ensure that the extracts meet your expectations and your brewing style. Different varieties and origins can offer different aromas and bitter substances, so it is important to make the right choice.
Pay attention to the concentration of the hop extracts and adjust the amount according to your brewing recipe. An overdose can lead to an overly bitter or aromatic beer, while an underdose may result in a weak flavor experience.
Store your hop extracts in a cool, dry, and airtight container to maintain their freshness and quality. Avoid exposing the extracts to direct sunlight or high temperatures for extended periods, as this can affect their durability.
